Although cast iron griddles require more maintenance than their stainless steel counterparts, they have many advantages. First off, cast iron is the superior heat conductor, meaning they stay hotter for longer and don’t fluctuate in temperature as quickly. Secondly, while stainless steel pans are built to last, cast iron pans will last a lifetime when properly cared for, something not offered by any other material. Lastly, a correctly seasoned cast iron pan will maintain its non stick properties for a lifetime, something that cannot be said about stainless steel.

Unlike carbon steel griddles, most cast iron griddles come pre seasoned and ready to use out of the box. That being said, many people feel it’s worth taking the time to strengthen seasoning before use.

In simple terms, seasoning involves baking oil into the pan to create a hydrophilic layer called a patina, that acts as a nonstick coating and shields the pan from rust-causing moisture. This process works because cast iron is porous, allowing oils to penetrate and bind to the metal in a process known as polymerization.

Seasoning cast iron involves covering the pan in a thin layer of vegetable oil (flax seed oil works as well) and placing it in the oven for several hours. When this is done, the oil becomes baked into the cast iron, creating the patina.

The most common complaint people have about their cast iron griddle is that it rusts after just a few uses. When this occurs, the culprit is rarely the pan, and more often than not, it’s a result of how the cast iron griddle was washed.

Contrary to what some manufacturers state, cast iron skillets and griddles are not dishwasher safe. When placed in the dishwasher, the soap removes the patina, meaning the pan is no longer protected from rust.

Once dried off with a cloth or paper towel, place the pan on a stove top burner over medium heat to ensure all moisture is gone. When the pan is nice and dry, it’s time to oil and buff it, using a small amount of vegetable oil or seasoning wax. Don’t use too much oil at this stage, as the pan can only absorb so much.

At this point, you can either store the pan away until the next use or place it in the oven for 35 minutes, which helps to reaffirm the patina.

No! Because of the rigged surface, steel wool is a very poor choice of material for washing cast iron cookware. Not only can it partially remove the patina, but it can also cause flaking, which many consider the start of the end when it comes to cast iron.

Because of its durability, cast iron can be used with any heat source without trouble. That being said, not every type of heat source agrees with cast iron. For example, while a cast iron griddle will have no issues operating on a glass stove top, the glass may be too easily damaged by the hefty cast iron, making it unsuitable. Similarly, as we have seen, induction stoves are only a good option for skillets that have a perfectly flat bottom, and griddles with edges or ridges won’t work very well or at all.
